
Ingredients:
1 lb ground beef (or ground turkey/chicken)
1 tbsp olive oil
½ small onion, diced
2 cloves garlic, minced
1 cup enchilada sauce (sugar-free or homemade keto-friendly)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or mozzarella cheese
4–6 low-carb tortillas (Mission Zero Carb or similar)
1 tsp chili powder
1 tsp cumin
½ tsp smoked paprika
Salt & pepper to taste
Fresh cilantro for garnish (optional)
Instructions:
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil. Add onions and garlic; sauté until fragrant.
Add ground beef and cook until browned. Stir in chili powder, cumin, paprika, salt, and pepper. Add ¼ cup enchilada sauce and mix well.
Place some beef mixture in each tortilla, roll up tightly, and arrange seam-side down in a greased baking dish.
Pour remaining enchilada sauce over the rolled tortillas. Sprinkle generously with cheddar and Monterey Jack cheeses.
Bake uncovered for 20 minutes, or until cheese is melted and bubbly.
Garnish with fresh cilantro and serve hot.
Serving Ideas:
Add sour cream, avocado slices, or jalapeños on top for extra flavor.
