1 cup (250 g) cottage cheese
½ cup (60 g) shredded mozzarella cheese
2 tbsp (15 g) grated Parmesan cheese
1 large egg
¼ tsp (1 g) garlic powder
¼ tsp (1 g) Italian seasoning
Salt and pepper, to taste
4 slices whole-grain or sourdough bread
1 tbsp (15 g) butter or olive oil for toasting
Optional: fresh basil or parsley for garnish
Directions:
In a bowl, combine cottage cheese, mozzarella, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until fully combined and creamy.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Spread the cottage cheese mixture evenly over each slice of bread. Place on the baking sheet.
Bake for 10–12 minutes, until the cheese is melted and bubbly, with lightly golden edges.
For extra crispiness, broil for 1–2 additional minutes.
Garnish with fresh herbs and serve warm as a savory breakfast, light lunch, or protein-packed snack.
