
Juicy, cheesy, and loaded with bacon — the ultimate keto comfort food!
Ingredients:
½ lb ground beef
3 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1 cup sliced pickles (rounds)
1 medium onion, diced
1 cup chopped bacon (about ½ lb)
¼ cup ketchup (use sugar-free for keto)
¼ cup mustard
Instructions
For the Bacon:
In a skillet or saucepan over medium-high heat, add the chopped bacon and ¼ cup water.
Cook for about 5 minutes, stirring occasionally, until the water evaporates and the bacon crisps up in its own fat.
Remove from the pan and set aside.
For the Beef:
In the same pan, add the diced onions and sauté for about 5 minutes, until they soften and turn translucent.
Add the ground beef and cook until no longer pink, breaking it apart with a spatula.
Stir in the cooked bacon and mix well.
Add the shredded cheddar cheese, stirring until it melts into the beef mixture.
Mix in the ketchup and mustard until evenly combined. Set aside while you make the cheese “tortilla.”
For the Cheese Burrito Shell:
Heat a large nonstick frying pan over medium heat.
Sprinkle half of the shredded mozzarella evenly across the surface to form a circle.
Cook until the edges start to brown and the cheese easily lifts from the pan, about 3–4 minutes.
Gently transfer the cheese shell to a piece of parchment paper to cool slightly. Repeat for the second shell.
Assemble the Burrito:
Place the beef and bacon filling in the center of the cheese shell.
Add pickle slices on top.
Carefully roll up the cheese shell, tucking in the sides as you go (like a burrito).
Slice in half and serve warm!
