Sautéed Zucchini with Mushrooms & Tomatoes

A quick and flavorful veggie side dish that’s light, low-carb, and full of color! Perfect alongside any protein or as a healthy lunch on its own.

Ingredients

1 small green zucchini, sliced

¼ onion, sliced

A handful of cherry tomatoes, halved

1 small can sliced mushrooms

1–2 tbsp olive oil

Salt, pepper, and garlic powder — to taste


Instructions

Sauté the Veggies

Heat olive oil in a large frying pan over medium heat.

Add the onions and zucchini slices, cooking until lightly browned and tender.

Add the Rest

Stir in the mushrooms and cherry tomatoes.

Continue to cook for a few minutes until everything is heated through and the tomatoes are just starting to soften.

Season & Serve

Season with salt, pepper, and garlic powder to taste.

Serve warm and enjoy!
