
Ingredients (Makes 2–3 chaffles)
1 large egg
½ cup shredded cheddar cheese (plus extra for topping)
¼ cup chopped broccoli florets (steamed or lightly cooked)
1 tbsp almond flour (optional, for structure)
1 tbsp grated Parmesan cheese (optional, adds crispness)
¼ tsp baking powder
Salt & pepper to taste
Optional: a pinch of garlic powder or onion powder
Instructions
- Preheat
Preheat your waffle maker and lightly grease it with nonstick spray or butter.
- Mix
In a bowl, whisk together egg, almond flour, baking powder, and seasonings.
Stir in broccoli and cheddar cheese until evenly coated.
- Cook
Spoon half the batter into the waffle maker.
Cook for 3–4 minutes, or until golden brown and crisp.
Repeat with remaining batter.
- Optional — Extra Cheesy Finish
Sprinkle a little extra cheddar inside before closing the waffle maker for an ooey-gooey, melted layer.
Let the cheese crisp up slightly before removing.
- Serve
Serve warm, alone or as a sandwich base, or dip with ranch, sour cream, or sugar-free ketchup.
