Ingredients:
For the Crust:
2 cups crushed Nilla Wafers (or any banana-flavored cookies)
5 tbsp unsalted butter, melted
For the Banana Pudding Cheesecake Layer:
2 ripe bananas, mashed
16 oz (450 g) cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup heavy whipping cream
For the Strawberry Topping:
1 cup fresh strawberries, hulled and sliced
2 tbsp sugar
1 tsp lemon juice
For Decoration:
Extra banana slicesHalved strawberriesCrumbled cookie crumbs
Instructions
1️⃣ Prepare the Crust:
1. Crush the cookies into fine crumbs using a food processor or by placing them in a zip-lock bag and rolling with a rolling pin.
2. Mix the crumbs with melted butter until evenly combined.
3. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.
4. Chill in the refrigerator for 10–15 minutes while preparing the filling.
2️⃣ Make the Banana Cheesecake Layer
1. In a large bowl, beat the cream cheese and sugar until smooth and creamy.
2. Add the mashed bananas and vanilla extract, and mix until fully incorporated.
3. In a separate bowl, whip the heavy cream until stiff peaks form.
4. Gently fold the whipped cream into the banana-cream cheese mixture to keep it light and fluffy.
5. Spread this mixture evenly over the chilled crust.6. Refrigerate for at least 2–3 hours, or until firm.
3️⃣ Prepare the Strawberry Sauce:
1. In a small saucepan, combine the strawberries, sugar, and lemon juice.
2. Cook over medium heat for 5–7 minutes, stirring occasionally, until the strawberries break down and the sauce thickens slightly.
3. Let the sauce cool completely before pouring it over the cheesecake.
4️⃣ Assemble and Decorate:
1. Pour the cooled strawberry sauce evenly over the chilled banana cheesecake layer.
2. Arrange extra banana slices and halved strawberries on top for a colorful, fresh finish.
3. Sprinkle crumbled cookie crumbs around the edges for added crunch.
