Total Time: 35 minutes
Net Carbs: ~3g per roll

Ingredients

For the Dough:

1 ½ cups shredded mozzarella cheese

2 oz cream cheese

1 ¼ cups almond flour

1 tablespoon coconut flour (optional for structure)

1 large egg

1 teaspoon vanilla extract

1 tablespoon granulated erythritol or monk fruit

1 teaspoon baking powder

For the Chocolate Filling:

2 tablespoons unsweetened cocoa powder

2 tablespoons butter, melted

2 tablespoons powdered erythritol

½ teaspoon cinnamon (optional, for warmth)

For the Cream Cheese Filling:

3 oz cream cheese, softened

1 tablespoon butter, softened

1 tablespoon powdered erythritol

½ teaspoon vanilla extract

Instructions

  1. Preheat Oven

Preheat oven to 375°F (190°C). Line a baking dish with parchment paper.

  1. Make the Fathead Dough

In a microwave-safe bowl, melt mozzarella and cream cheese together (about 45 seconds, stir halfway).

Stir in almond flour, coconut flour, baking powder, erythritol, vanilla, and egg.

Mix well until dough forms. Knead until smooth.

Roll out between two sheets of parchment paper into a rectangle (about ¼-inch thick).

  1. Make the Fillings

In one bowl, mix chocolate filling ingredients.

In another, beat together cream cheese filling ingredients until smooth.

  1. Layer the Fillings

Spread the cream cheese filling evenly over the rolled-out dough.

Then spread the chocolate filling on top, swirling lightly with a spatula to create a marble pattern.

  1. Roll It Up

Roll the dough tightly from one end into a log.
Slice into 10–12 rolls using a sharp knife or dental floss for clean cuts.

  1. Bake

Place rolls on the prepared baking dish and bake for 13–15 minutes, or until golden brown and set.

  1. Cool & Serve

Let cool for 10 minutes.
Serve warm — they’ll be soft, gooey, and lightly sweet, just like in your photo!

Tips

For extra richness, drizzle with keto chocolate ganache or cream cheese glaze (mix cream cheese + powdered sweetener + cream).

You can refrigerate up to 5 days or freeze for 2 months. Reheat in the oven or air fryer for a fresh texture.

Add chopped pecans or sugar-free chocolate chips for variety.
