
This Baileys Christmas Cake is a festive favorite — rich, moist, and filled with the comforting flavors of fruit, chocolate milk, and a hint of creamy Baileys! The best part? It’s made right in your slow cooker — no oven needed! Perfect for an easy, hands-off holiday treat.
Ingredients:
1 kg mixed dried fruit (include glacé cherries for extra sweetness)
2 cups chocolate milk
½ to ¾ cup Baileys Irish Cream (adjust to taste)
2 cups self-raising flour
Instructions:
Soak the Fruit:
In a large bowl, combine the mixed fruit, chocolate milk, and Baileys.
Cover and let it soak for 24 hours (overnight is fine). This step makes the fruit plump and flavorful.
Prepare the Batter:
After soaking, add the self-raising flour to the fruit mixture.
Stir well until everything is evenly combined — the batter will be thick and rich.
Line the Slow Cooker:
Line your slow cooker with baking paper (make sure it comes up the sides to prevent burning).
You can also lightly grease the paper or use a reusable baking liner.
Pour and Smooth:
Pour the cake mixture into the lined slow cooker. Smooth the top with a spoon or spatula.
Cook Slowly:
Cover with the lid (place a clean tea towel under the lid to catch moisture).
Cook on LOW for 6–7 hours, checking at the 5-hour mark.
The cake is done when a skewer inserted into the center comes out clean.
