Ingredients
3 large eggs
A pinch of salt
8 g vanilla sugar (or 1 tsp vanilla extract)
100 ml milk
1 tablespoon instant coffee
180 g all-purpose flour
20 g unsweetened cocoa powder
15 g baking powder
Instructions
Preheat the oven:
Set your oven to 170°C (340°F) and line a round or loaf baking pan with parchment paper, or lightly grease it with butter.
Prepare the coffee mixture:
Dissolve the instant coffee in the milk and set aside to cool slightly.
Whip the eggs:
In a large bowl, beat the eggs, vanilla sugar, and salt with a hand mixer until the mixture becomes light, fluffy, and doubled in volume.
Add the wet ingredients:
Slowly pour in the milk and coffee mixture, mixing gently until combined.
Add dry ingredients:
In a separate bowl, sift together the flour, cocoa powder, and baking powder.
Gradually add the dry ingredients into the wet mixture, mixing until smooth and lump-free.
Bake:
Pour the batter into your prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Cool and serve:
Let the cake cool for about 10 minutes before removing it from the pan.
Dust with a little powdered sugar or drizzle with chocolate glaze if desired.
Tips
For an extra moist texture, brush the warm cake with a little sweetened coffee syrup.
