
Ingredients:
½ cup (115g) unsalted butter softened
¼ cup (50g) granulated sugar
1 large egg yolk
1 teaspoon vanilla
1 ¾ cups (220g) all-purpose flour
¼ teaspoon salt
Optional Finishes:
Powdered sugar dusting
Cocoa powder coating
Crushed freeze-dried berries or citrus zest
Instructions:
In a large bowl beat butter and sugar until light and fluffy. Add egg yolk and vanilla. Mix well.
Stir in flour and salt until a soft dough forms. Wrap and chill 30 minutes.
Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
Scoop by teaspoon and roll into small balls. Place on trays and flatten slightly.
Bake 12 to 15 minutes until edges are lightly golden but centers remain pale.
Cool completely on wire racks. Dust with powdered sugar or cocoa before serving.
