200 g tea biscuits or graham crackers
100 g butter, melted

500 g cream cheese (Polish-style “twaróg sernikowy” or regular cream cheese)
200 ml heavy cream (whipping cream)
100 g white chocolate, melted
100 g powdered sugar
2 tsp gelatin
50 ml water
1 tsp vanilla extract

300 g fresh strawberries, halved
50 g white chocolate, for decoration
Instructions
Step 1: Prepare the Crust
- Crush the biscuits: Use a food processor to grind the biscuits into fine crumbs.
- Mix with butter: Pour in the melted butter and mix until well combined.
- Form the crust: Press the mixture firmly into the bottom of a 24 cm (9-inch) springform pan, creating an even layer.
- Chill: Place in the refrigerator for about 30 minutes to set.
Step 2: Make the Cheesecake Filling
- Prepare the gelatin: Warm the water in a small saucepan, then add the gelatin and stir until fully dissolved. Set aside to cool slightly.
- Mix the filling: In a large bowl, combine cream cheese, heavy cream, melted white chocolate, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Add the gelatin: Slowly pour the cooled gelatin into the cheesecake mixture while stirring continuously to ensure even texture.
