Orange Carrot Cottage Cheese Protein Cake


Healthy, high-protein… but tastes like dessert heaven.
Moist carrot-speckled cake with creamy cottage richness and a golden crunchy top.

INGREDIENTS
Protein Cake Batter

1 cup cottage cheese

2 large eggs

¼ cup maple syrup or honey

1 tsp vanilla extract

1 cup finely grated carrots

½ cup oat flour

½ cup vanilla protein powder

1 tsp baking powder

½ tsp cinnamon

Pinch salt

Crunchy Topping

¼ cup crushed walnuts or pecans

2 tbsp brown sugar or coconut sugar

1 tbsp melted butter

The oven fills the kitchen with warm cinnamon and sweet carrot aroma.

INSTRUCTIONS

Preheat oven to 175°C

Line a small baking pan with parchment paper.

Blend cottage cheese until smooth.

Add eggs, maple syrup, and vanilla.

Mix in grated carrots gently.

Stir in oat flour, protein powder, baking powder, cinnamon, and salt.

Pour batter into prepared pan evenly.

Mix nuts, sugar, and melted butter for topping.

Sprinkle topping evenly over batter.

Bake 35–40 minutes until center is set.

Cool slightly before slicing.
