Lightened Up Coffee Cake


This Lightened Up Coffee Cake is soft, moist, and perfectly sweet with a tender crumb and a delicious cinnamon streusel topping. Made with lighter ingredients like Greek yogurt and reduced sugar, it gives you all the classic coffee cake flavor you love — but with fewer calories and less fat. Perfect for breakfast, brunch, or an afternoon treat with a warm cup of coffee or tea.

Ingredients:
For the Cake:
1 ½ cups all-purpose flour
½ cup whole wheat flour (optional for extra fiber)
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup granulated sugar
¼ cup brown sugar
1 tsp ground cinnamon
1 cup plain Greek yogurt (or low-fat yogurt)
2 large eggs
¼ cup unsweetened applesauce (instead of oil)
1 tsp vanilla extract

For the Streusel Topping:
¼ cup brown sugar
2 tbsp all-purpose flour
1 tsp cinnamon
1 tbsp melted butter (or coconut oil)

Directions:
Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.

Prepare the dry ingredients. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon.

Mix the wet ingredients. In a large bowl, whisk together the granulated sugar, brown sugar, Greek yogurt, eggs, applesauce, and vanilla extract until smooth and well combined.

Combine wet and dry ingredients. Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Do not overmix.

Make the streusel topping. In a small bowl, mix brown sugar, flour, and cinnamon. Stir in melted butter until crumbly.

Assemble the cake. Pour the batter into the prepared baking pan and spread evenly. Sprinkle the streusel mixture evenly over the top.

Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Cool slightly before slicing. Serve warm or at room temperature.
