Cucumber Sandwiches


Ingredients:

  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • 8 slices of whole grain or white bread
  • Optional: fresh herbs for garnish (like dill or parsley)

Instructions:

Prepare the Cream Cheese Spread:

  1. In a medium bowl, combine the softened cream cheese and mayonnaise. Mix until smooth and creamy.
  2. Add the chopped dill, lemon juice, salt, and pepper. Stir until all ingredients are well incorporated.

Assemble the Sandwiches:

  1. Lay out the slices of bread on a clean surface.
  2. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  3. Place a layer of cucumber slices on top of the cream cheese spread on half of the bread slices.
  4. Top with another slice of bread, cream cheese side down, to create a sandwich.

Cut and Serve:

  1. Carefully cut each sandwich into quarters or halves, depending on your preference.
  2. Arrange the sandwiches on a platter and garnish with fresh herbs if desired.
