This Strawberry Cream Cheese Cobbler is a warm, comforting dessert made with juicy, sweet strawberries and pockets of rich, creamy cheesecake flavor baked into a soft, buttery cobbler crust.
Ingredients:
2 cups fresh strawberries, sliced
½ cup granulated sugar
1 tbsp cornstarch
1 tsp vanilla extract
8 oz cream cheese, softened
½ cup powdered sugar
1 cup all-purpose flour
1 tsp baking powder
¼ tsp salt
¾ cup milk
½ cup unsalted butter, melted
Instructions:
Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
Prepare the strawberries:
In a bowl, mix the sliced strawberries with granulated sugar, cornstarch, and vanilla extract. Stir well and set aside to allow the juices to develop.
Make the cream cheese mixture:
In another bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. Set aside.
Prepare the batter:
In a separate bowl, whisk together the flour, baking powder, and salt. Add the milk and melted butter, mixing until just combined.
Assemble the cobbler:
Pour the batter evenly into the prepared baking dish. Spoon the strawberry mixture over the batter without stirring. Drop spoonfuls of the cream cheese mixture evenly over the top.
Bake:
Place in the oven and bake for 40–45 minutes, or until the top is golden brown and the center is set.
Cool and serve:
Let the cobbler cool slightly before serving. Enjoy warm on its own or with a scoop of vanilla ice cream.
