Ingredients:
- 700 g pork tenderloin or pork shoulder, cut into cubes
- 2 tbsp Jamaican jerk seasoning
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lime
- 1 tbsp soy sauce
- 1 tsp brown sugar or honey
- 1/2 tsp ground allspice (optional)
- Salt and black pepper, to taste
- Wooden or metal skewers
For the salsa:
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1/2 red bell pepper, diced
- Juice of 1 lime
- 1 tbsp olive oil for salsa
- Salt, to taste
- Fresh cilantro or parsley, chopped
Directions:
- Marinate the pork: In a mixing bowl, whisk together the jerk seasoning, olive oil, minced garlic, lime juice, soy sauce, brown sugar, allspice, and a pinch of salt and pepper.
