Loaded Avocado Toast with Eggs


Ingredients:

  • 2 slices rustic bread, toasted
  • 1 ripe avocado, mashed
  • 2 large eggs, medium-boiled (for jammy yolk) or hard-boiled, sliced
  • Salt and freshly ground black pepper
  • Dried herbs (e.g., oregano, thyme) and red pepper flakes (for garnish)

Instructions:

  1. Prep:
    Toast bread. Mash avocado and season with salt and pepper.
  2. Boil Eggs:
    Boil eggs for 6-7 mins for jammy yolks (or 10-12 mins for hard-boiled). Cool in ice water, peel, and slice.
  3. Assemble:
    Spread mashed avocado on toast. Arrange sliced eggs on top.
  4. Serve:
    Season generously with black pepper, dried herbs, and red pepper flakes.
