Ingredients:
For the blueberry filling:
4 cups fresh or frozen blueberries
½ cup granulated sugar
1 tablespoon lemon juice
1 teaspoon lemon zest (optional)
1 tablespoon cornstarch
For the cobbler topping:
1 cup all-purpose flour
¼ cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, melted
¼ cup milk
1 teaspoon vanilla extract
For serving:
Vanilla ice cream
Powdered sugar (for dusting)
Instructions:
Preheat the oven to 180°C (350°F). Grease a baking dish lightly with butter.
Prepare the blueberry filling:
In a bowl, mix the blueberries, sugar, lemon juice, lemon zest, and cornstarch. Stir well until the berries are coated. Pour the mixture into the prepared baking dish.
Make the cobbler topping:
In another bowl, combine flour, sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Stir until a soft batter forms.
Assemble:
