Easy Lemon Lentil Soup

Ingredients:
1 cup dried lentils (rinsed and drained)
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
1 celery stalk, diced
6 cups vegetable broth (or chicken broth)
1 teaspoon ground cumin
½ teaspoon turmeric (optional)
Salt and black pepper to taste
Juice of 1–2 fresh lemons
Fresh parsley (for garnish)

Instructions:

Sauté the vegetables:
Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 3–4 minutes until soft. Stir in garlic, carrots, and celery. Cook for another 3–4 minutes.

Add spices and lentils:
Stir in cumin, turmeric, salt, and pepper. Add the rinsed lentils and mix well.

Pour in the broth:
Add the vegetable broth and bring the mixture to a boil. Once boiling, reduce heat to low and let it simmer for 25–30 minutes, or until the lentils are tender.

Blend (optional):
For a creamier texture, use an immersion blender to partially blend the soup. You can blend it completely if you prefer a smooth consistency.

Add lemon juice:
Stir in fresh lemon juice at the end of cooking. Adjust salt and lemon to taste.

Serve:
Ladle the soup into bowls and garnish with fresh parsley. Serve warm with crusty bread or a side salad.
