Ingredients
2 large eggs
2 cups potato wedges (or thick-cut fries)
1 cup sliced ham (or turkey ham)
2 tablespoons olive oil
Salt and black pepper to taste
½ teaspoon paprika
½ teaspoon garlic powder
Fresh parsley, chopped (for garnish)
Optional: shredded cheese or butter for extra richness
Instructions
1️⃣ Prepare the Fries
Preheat your oven to 200°C (400°F).
Toss the potato wedges with olive oil, salt, pepper, paprika, and garlic powder.
Spread them on a baking tray in a single layer.
Bake for 30–35 minutes, flipping halfway through, until golden brown and crispy.
(You can also air fry at 200°C for 18–22 minutes.)
2️⃣ Heat the Ham
In a skillet over medium heat, lightly sauté the sliced ham for 2–3 minutes until warmed and slightly crispy on the edges.
Arrange the ham as the base on your serving plate or container.
3️⃣ Cook the Eggs
In the same skillet, add a little oil or butter.
Crack the eggs gently into the pan.
Cook on low heat until the whites are set but the yolks remain runny (about 3–4 minutes).
Season lightly with salt and black pepper.
4️⃣ Assemble
Place the sunny-side-up eggs over the warm ham.
Add the crispy fries on the side.
Sprinkle fresh chopped parsley over the eggs.
Serve immediately while the yolks are perfectly golden and flowing.
Serving Tip
For an extra indulgent touch, sprinkle shredded cheese over the ham before adding the eggs, or drizzle a little hot sauce for a spicy kick.
Serve with toasted bread to soak up that rich yolk!
Crispy. Creamy. Savory. Absolute comfort in every bite.
