Garlic Butter Baked Scallops

Ingredients
• 1 lb (450 g) large sea scallops
• 3 tbsp unsalted butter, melted
• 2 cloves garlic, minced
• 2 tbsp lemon juice (freshly squeezed)
• 1/4 cup grated Parmesan cheese
• 1/4 cup breadcrumbs (panko or regular)
• 2 tbsp chopped fresh parsley
• Salt and black pepper, to taste
• Lemon wedges, for serving

Instructions

  1. Preheat oven:
Preheat your oven to 400°F (200°C).
  2. Prepare scallops:
Pat the scallops dry with paper towels to remove excess moisture. Season lightly with salt and pepper.
  3. Make garlic butter mixture:
In a small bowl, combine melted butter, garlic, and lemon juice. Stir well.
  4. Assemble:
Place scallops in a single layer in a lightly greased baking dish.
Drizzle the garlic butter mixture evenly over them.
  5. Add topping:
In another bowl, mix breadcrumbs, Parmesan, and parsley. Sprinkle this mixture over the scallops.
  6. Bake:
Bake for 12–15 minutes, or until the scallops are opaque and the topping is golden brown.
  7. Serve:
Garnish with extra parsley and serve hot with lemon wedges or crusty bread for dipping.

Tips
• Don’t overbake — scallops cook very fast! Overcooking makes them rubbery.
• Add a pinch of paprika for color and subtle spice.
• Great served over linguine or with a white wine sauce.
