There’s nothing more comforting than a rich, slow-simmered beef stew infused with deep red wine flavor.
Ingredients
Meat
3 lbs boneless beef chuck, cut into large cubes
Vegetables & Herbs
4 large carrots, sliced
1 lb small white potatoes, halved
2 medium yellow onions, chopped
7 cloves garlic, minced
1 bay leaf
½ tsp dried thyme
Fresh parsley, chopped (for garnish)
Liquids & Flavorings
2 cups beef stock
2 cups dry red wine
1½ tbsp tomato concentrate
2 tbsp balsamic vinegar
Seasonings
2 tsp salt
1 tsp freshly ground black pepper
1½ tsp sugar

¼ cup plain flour
3 tbsp olive oil
Instructions
1️⃣ Prepare the Beef
Pat the beef cubes dry with paper towels. Season with salt and black pepper, then lightly coat them in flour, shaking off excess.
2️⃣ Brown the Meat
Heat olive oil in a large heavy pot or Dutch oven over medium-high heat. Brown the beef in batches (do not overcrowd). Sear until deep golden brown on all sides. Remove and set aside.
3️⃣ Sauté the Aromatics
In the same pot, add onions and cook for 3–4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
4️⃣ Build the Sauce
Stir in tomato concentrate and cook for 1 minute. Pour in the red wine, scraping the bottom of the pot to release all the flavorful browned bits. Let it simmer for 5–7 minutes to slightly reduce.
5️⃣ Simmer the Stew
Return the beef to the pot. Add beef stock, carrots, potatoes, bay leaf, thyme, sugar, and balsamic vinegar. Stir well.
Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2½ to 3 hours, stirring occasionally, until the beef is fork-tender and the sauce has thickened.
6️⃣ Final Touch
Remove bay leaf. Taste and adjust seasoning if needed. If the sauce is too thin, simmer uncovered for 10–15 more minutes.
7️⃣ Serve
Garnish with freshly chopped parsley and serve hot with crusty bread or mashed potatoes.
