Shrimp and Pepper Stir-Fry


Bright, flavorful, and quick to whip up, this Shrimp and Pepper Stir-Fry is a weeknight favorite that’s as delicious as it is easy!

Ingredients:

  • 12–15 large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • Salt and black pepper, to taste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1/4 teaspoon red chili flakes (optional, for spice)
  • Steamed jasmine rice or rice noodles for serving
  • Sesame seeds (optional)
  • Chopped green onions for garnish

Directions:

  1. Start by making the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, honey, and chili flakes. Set it aside for later.
  2. Next, cook the shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the shrimp with salt and pepper, then cook for 2–3 minutes per side until they’re pink and perfectly cooked. Remove them from the skillet and set aside.
  3. Time to stir-fry those veggies! Add the remaining oil to the skillet. Sauté the garlic and ginger for about 30 seconds until fragrant. Toss in the bell peppers and onion, stir-frying them for 3–4 minutes until tender-crisp.
  4. Combine the shrimp and sauce: Return the shrimp to the skillet and pour the sauce all over those tasty veggies and shrimp. Toss it all together to coat and heat through for 1–2 minutes.
  5. Serve it up! Spoon your colorful stir-fry over steamed rice or rice noodles, and top it off with sesame seeds and chopped green onions for that extra flair. Enjoy your delicious Shrimp and Pepper Stir-Fry!
