
Bright, flavorful, and quick to whip up, this Shrimp and Pepper Stir-Fry is a weeknight favorite that’s as delicious as it is easy!
Ingredients:
- 12–15 large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
- 2 tablespoons soy sauce or tamari
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1 teaspoon honey or brown sugar
- 1/4 teaspoon red chili flakes (optional, for spice)
- Steamed jasmine rice or rice noodles for serving
- Sesame seeds (optional)
- Chopped green onions for garnish
Directions:
- Start by making the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, honey, and chili flakes. Set it aside for later.
- Next, cook the shrimp: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the shrimp with salt and pepper, then cook for 2–3 minutes per side until they’re pink and perfectly cooked. Remove them from the skillet and set aside.
- Time to stir-fry those veggies! Add the remaining oil to the skillet. Sauté the garlic and ginger for about 30 seconds until fragrant. Toss in the bell peppers and onion, stir-frying them for 3–4 minutes until tender-crisp.
- Combine the shrimp and sauce: Return the shrimp to the skillet and pour the sauce all over those tasty veggies and shrimp. Toss it all together to coat and heat through for 1–2 minutes.
