Meat Layer
1 lb ground beef
1 tbsp olive oil (if needed)
3 cloves garlic, minced
½ small onion, chopped (optional, omit for stricter keto)
1 tsp Italian seasoning
½ tsp paprika
Salt + pepper to taste
Zucchini Layer
2 medium zucchini, thinly sliced into rounds
Creamy Cheese Mixture
1 cup ricotta cheese (or cottage cheese)
1 large egg
½ cup parmesan cheese
1 tsp garlic powder
Topping
2 cups shredded mozzarella
Extra parmesan for browning
Fresh parsley (optional)
Instructions
1️⃣ Cook the Beef
Brown ground beef in a skillet (8–10 min)
Add garlic, seasoning, salt, pepper
Drain excess grease
2️⃣ Prep Zucchini
Slice zucchini thin
Pat dry with paper towels
(prevents watery casserole)
3️⃣ Mix Ricotta Layer
In a bowl combine:
Ricotta
Egg
Parmesan
Garlic powder
Mix until creamy.
4️⃣ Assemble Casserole
In a greased baking dish:
Spread cooked beef on bottom
Add zucchini slices in layers
Spoon ricotta mixture over zucchini
Repeat layers if needed
Top with mozzarella + parmesan
5️⃣ Bake
Bake at 375°F (190°C) for 25–30 min
Broil 2–3 minutes at end for golden top
6️⃣ Rest & Serve
Let sit 10 minutes before scooping (like the photo).
