Ingredients:
1 lb (450 g) smoked sausage or Italian sausage, sliced
1 cup long-grain white rice (uncooked)
2 cups chicken broth
1 small onion, diced
1 bell pepper, diced (any color)
2 cloves garlic, minced
1 cup diced tomatoes (canned or fresh)
1 teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon chili flakes (optional for heat)
2 tablespoons olive oil
Fresh parsley for garnish

Method of Preparation:

Cook the sausage:
Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.

Sauté the vegetables:
In the same pan, add the diced onion and bell pepper. Cook for about 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Add rice and seasoning:
Stir in the uncooked rice, paprika, thyme, salt, black pepper, and chili flakes. Mix well to coat the rice with the spices.

Add liquids:
Pour in the chicken broth and diced tomatoes. Stir everything together and bring to a gentle boil.

Simmer:
Return the sausage to the pan. Reduce heat to low, cover, and let simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.

Rest and serve:
Turn off the heat and let it sit covered for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.

Serving Tips:
Serve with a fresh green salad or steamed vegetables.

Add a squeeze of lemon juice for extra brightness.

Sprinkle shredded cheese on top for a creamy finish.

This dish is bold, comforting, and incredibly easy — the kind of meal that brings everyone back for seconds.
