Oatmeal, Apple & Carrot Bake

Made with blended oats instead of flour and naturally sweet ingredients, this recipe is nutritious, filling, and easy to prepare.

Ingredients:
2 cups (200 g) rolled oats (blended into oat flour)
1 teaspoon baking powder
1 cup (240 ml) milk (dairy or plant-based)
2 medium apples, grated
1 medium carrot, finely grated
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon (optional)
A pinch of salt
2 tablespoons chopped nuts or raisins (optional)

Instructions:
Preheat the oven to 180°C (350°F). Grease or line a small baking dish with parchment paper.

Prepare the oats:
Place the rolled oats in a blender and blend until they reach a flour-like consistency.

Mix dry ingredients:
In a large bowl, combine the blended oats, baking powder, cinnamon (if using), and salt.

Add wet ingredients:
Stir in the milk, eggs, and vanilla extract. Mix well until smooth.

Fold in fruits and vegetables:
Add the grated apples and carrots. Mix until evenly combined. If using nuts or raisins, fold them in now.

Bake: Pour the mixture into the prepared baking dish and smooth the top.
Bake for 30–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Cool before slicing. Let it rest for 10 minutes before cutting into squares.

Serving Suggestions:
Serve warm with a spoonful of Greek yogurt.
Add a drizzle of natural peanut butter for extra richness.

Sprinkle with extra cinnamon before serving.
