It’s the kind of sauce you’ll find yourself reaching for again and again. Perfect for dipping spring rolls, glazing chicken or shrimp, drizzling over noodles, or adding a little kick to everyday meals.

Ingredients
1 cup white vinegar
1 cup sugar
2–3 red chilli peppers, finely chopped (adjust to taste)
3 cloves garlic, minced
1 tablespoon fresh ginger, grated (optional but recommended)
2 tablespoons water
1 tablespoon cornstarch
Method
In a saucepan over medium heat, combine the vinegar and sugar. Stir until the sugar is completely dissolved.
Add the chopped chillies, garlic, and ginger. Bring the mixture to a gentle boil.
Reduce the heat and let it simmer for 5–7 minutes, stirring occasionally, until fragrant.
In a small bowl, mix the cornstarch with the water until smooth.
Slowly pour the cornstarch mixture into the sauce while stirring continuously.
Simmer for another 2–3 minutes until the sauce thickens and turns glossy.
Remove from heat and allow to cool slightly — it will thicken more as it cools.
