Ingredients:
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
2 cups semi-sweet chocolate chips
1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions:
Prepare the Filling:
In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Mix until smooth and creamy.
Add Sugar:
Gradually add powdered sugar, stirring until the mixture forms a thick dough-like consistency.
Shape the Balls:
Roll the mixture into small 1-inch balls and place them on a parchment-lined baking sheet. Freeze for about 30 minutes to firm up.
Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate chips (and coconut oil, if using) in 20-second intervals, stirring between each, until smooth.
Dip the Balls:
Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, coating evenly. Let any excess drip off.
