
Ingredients:
1 ½ lbs cod loin fillet, patted dry
Salt and black pepper, to taste
2 tbsp olive oil
4 tbsp fresh lemon juice (from 1–2 lemons)
4 cloves garlic, minced
¼ cup butter, diced
1 small lemon, thinly sliced
2 tbsp chopped parsley (optional, for garnish.
Directions:
Prepare the oven & dish – Preheat oven to 400°F (200°C). Lightly grease a baking dish large enough for the cod pieces. Place the cod fillets inside and season with salt and pepper.
Make the sauce – In a small bowl, whisk together olive oil, lemon juice, and garlic. Season lightly with salt and pepper.
Assemble – Pour the lemon-garlic sauce over the cod. Scatter diced butter over the fillets and top with lemon slices.
Bake – Bake for 15–20 minutes, until the cod is opaque and flakes easily with a fork.
Serve – Garnish with parsley and serve hot with sides like rice or steamed vegetables.
