Ingredients (Serves 4)
For the Shrimp
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
½ tsp salt
½ tsp black pepper
For the Nachos
1 large bag tortilla chips
2 cups shredded Monterey Jack or mozzarella cheese
1 cup shredded cheddar cheese
Optional Toppings
Diced onions
Jalapeños
Fresh cilantro
Sour cream or crema
Instructions
Preheat oven to 375°F.
Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
Heat a skillet over medium-high heat and cook shrimp 1–2 minutes per side until just pink. Remove from heat.
Spread tortilla chips evenly on a baking tray or oven-safe dish.
Sprinkle half the cheese over the chips, then top with shrimp and remaining cheese.
Bake for 8–10 minutes, until cheese is fully melted and bubbly.
Remove from oven and add desired toppings. Serve immediately.
