Ingredients
1½ to 2 pounds pork tenderloin
⅓ cup pure maple syrup
3 tablespoons grainy mustard (or Dijon mustard)
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)
¾ teaspoon salt
½ teaspoon black pepper
2 cloves garlic, minced (optional)

Method of Preparation
Preheat your oven to 400°F (200°C). Lightly grease a roasting pan or baking dish.

Place the pork tenderloin in the prepared pan and pat it dry with paper towels.

In a small bowl, whisk together the maple syrup, mustard, apple cider vinegar, olive oil, rosemary, salt, black pepper, and garlic if using.

Pour the sauce evenly over the pork tenderloin, turning it gently so it’s well coated.

Roast uncovered for 25–30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Remove from the oven and let the pork rest for 5 minutes before slicing. Spoon the pan sauce over the sliced pork before serving.

Serve with roasted or mashed potatoes to soak up the extra sauce, along with green beans, roasted carrots, or broccoli.
