1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 medium potatoes, peeled and cut into chunks
1 cup frozen peas
1 cup corn
1 can diced tomatoes
1 small can tomato sauce
4 cups beef broth
Salt and black pepper
Paprika or dried parsley (optional)
Instructions

Brown the ground beef in a large pot over medium heat, breaking it up as it cooks.
Add the diced onion and cook until soft, then stir in the garlic.
Add the potatoes, diced tomatoes, tomato sauce, and beef broth.
Bring to a gentle boil, then reduce heat and simmer until the potatoes are tender.
Stir in the peas and corn and cook a few minutes more.
Season with salt, black pepper, and optional spices, adjusting to taste.
