Ingredients
4 boneless, skinless chicken breasts, pounded to even thickness
Salt and black pepper, to taste
1 cup (125 g) all-purpose flour
2 large eggs, beaten
1½ cups (150 g) Italian-style breadcrumbs
½ cup (50 g) grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano or Italian seasoning
½ cup vegetable or olive oil, for frying
1½ cups (360 ml) marinara sauce
1½ cups (170 g) shredded mozzarella cheese
Fresh basil or parsley, for garnish (optional)
Method of Preparation
Prepare the chicken
Season both sides of the chicken breasts with salt and black pepper.
Set up the breading station
Place flour in one shallow dish, beaten eggs in another, and mix the breadcrumbs with Parmesan cheese and seasonings in a third dish.
Bread the chicken
Dredge each chicken breast in flour, shaking off excess. Dip into the eggs, then coat thoroughly with the breadcrumb mixture, pressing gently so it sticks.
Fry the chicken
Heat oil in a large skillet over medium heat. Fry the chicken for 3–4 minutes per side, until golden brown and cooked through. Transfer to a paper-towel-lined plate.
Assemble
Preheat the oven to 190°C (375°F). Place the fried chicken in a baking dish. Spoon marinara sauce over each piece, then top with mozzarella cheese.
Bake
Bake for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
Serve
Garnish with fresh basil or parsley if desired. Serve hot with pasta, salad, or garlic bread.
