Strawberry Shortcake Truffles


Description
These Strawberry Shortcake Truffles are sweet, creamy, and bursting with fresh strawberry flavor. Made with crushed shortcake, real strawberries, and a smooth white chocolate coating, they taste like a bite-sized version of classic strawberry shortcake. Perfect for parties, holidays, or when you want an easy no-bake dessert that looks fancy but is incredibly simple to make.

Ingredients
For the Truffle Filling:
1½ cups vanilla cake or shortcake crumbs
½ cup freeze-dried strawberries, finely crushed
4 oz (115 g) cream cheese, softened
2 tablespoons powdered sugar
½ teaspoon vanilla extract

For the Coating:
1½ cups white chocolate chips or melting wafers
1 teaspoon coconut oil or vegetable oil (optional, for smoother coating)

For Garnish (optional):
Extra crushed freeze-dried strawberries
White chocolate drizzle

Method of Preparation
In a mixing bowl, combine the cake crumbs and crushed freeze-dried strawberries.

Add the softened cream cheese, powdered sugar, and vanilla extract. Mix until a soft dough forms.

Roll the mixture into small balls (about 1 tablespoon each) and place them on a baking tray lined with parchment paper.

Refrigerate for 30–45 minutes, or until firm.
Melt the white chocolate (and coconut oil if using) in a microwave or double boiler, stirring until smooth.

Dip each chilled truffle into the melted white chocolate, coating completely.

Place back on the parchment paper and sprinkle with crushed strawberries or drizzle with white chocolate if desired.

Let the truffles set at room temperature or refrigerate until the coating is firm.

Tip: Store truffles in an airtight container in the refrigerator for up to 5 days.
