Homemade Snickers Yule Log

This indulgent chocolate cake roll is filled with peanut nougat cream, caramel sauce, and chopped peanuts, then frosted in rich chocolate ganache. A holiday showstopper that tastes just like a Snickers bar in Yule log form.

Ingredients:

For the Chocolate Sponge Cake:

¾ cup all-purpose flour

¼ cup unsweetened cocoa powder

1 tsp baking powder

¼ tsp salt

4 large eggs

½ cup granulated sugar

¼ cup brown sugar

1 tsp vanilla extract

Powdered sugar, for dusting

For the Nougat Filling:

½ cup marshmallow fluff

¼ cup creamy peanut butter

⅓ cup powdered sugar

¼ cup heavy cream

½ cup chopped roasted peanuts

For the Caramel Layer:

½ cup thick caramel sauce (store-bought or homemade)

For the Chocolate Ganache:

1 cup semi-sweet chocolate chips

½ cup heavy cream

1 tbsp butter (for shine)

Instructions:

Make the Cake:
Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment and lightly grease.
In a bowl, whisk flour, cocoa, baking powder, and salt. In another bowl, beat eggs, sugars, and vanilla until pale and thick. Fold in dry ingredients. Pour batter into the pan and spread evenly.
Bake for 10–12 minutes. Immediately dust a kitchen towel with powdered sugar and invert the warm cake onto it. Peel off parchment and roll the cake gently with the towel. Let cool completely.

Make the Nougat Filling:
In a bowl, beat marshmallow fluff, peanut butter, and powdered sugar until combined. Add cream and beat until fluffy. Stir in chopped peanuts.

Assemble the Log:
Unroll the cooled cake and spread with nougat filling. Drizzle caramel sauce evenly over the top. Carefully re-roll the cake (without the towel). Wrap tightly and refrigerate for 1 hour.

Make the Ganache:
Heat cream until just simmering, then pour over chocolate chips and butter. Let sit for 2 minutes, then stir until smooth. Cool slightly until spreadable.

Frost the Log:
Place chilled cake on a serving platter. Spread ganache over the entire roll. Use a fork to create bark-like texture. Chill until ready to serve.

Optional Garnish:
Top with chopped peanuts, drizzled caramel, or a dusting of powdered sugar for a snowy effect.
