1 sirloin or flank steak (about 6–8 oz)

1 tbsp olive oil (for searing)

Salt and black pepper to taste

1/2 tsp garlic powder

1/2 tsp smoked paprika

For the Roasted Potatoes:

1 cup baby potatoes (halved)

1 tbsp olive oil

Salt, pepper, and fresh parsley to taste

Fresh Add-ons:

1/2 avocado (sliced or halved)

1/2 cup cherry or grape tomatoes (halved)

Optional: lemon juice or chopped green onion for garnish

How to Make It :

1️⃣ Roast the Potatoes:

Preheat oven to 425°F. Toss halved baby potatoes with oil, salt, pepper, and paprika. Roast for 25–30 mins until golden and crispy. This is your go-to crispy side and comfort food done right.

2️⃣ Season & Sear the Steak:

3️⃣ Slice and Rest:
