
Ingredients:
4 salmon fillets (about 6 oz each)
1 cup fresh pineapple chunks (or canned, drained)
3 tbsp honey
3 tbsp soy sauce
2 tbsp fresh lime juice
2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp chili flakes (optional, for a little heat)
Salt and pepper to taste
Fresh cilantro or green onions for garnish
Directions:
- Preheat your oven to 375°F. Line a baking sheet with foil for easy cleanup.
- In a small bowl, whisk together the honey, soy sauce, lime juice, garlic, and chili flakes (if using).
- Pat the salmon dry. Place the fillets on the prepared baking sheet, brush with olive oil, and season both sides with salt and pepper.
- Brush the salmon generously with the honey mixture.
- Scatter the pineapple chunks around the salmon and drizzle any remaining sauce over the top.
- Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the pineapple is lightly caramelized.
- Garnish with fresh cilantro or green onions and serve immediately.
