
Ingredients
Shredded cooked chicken
Chicken broth
Mixed vegetables (peas, carrots, corn, green beans)
Carrots, sliced
Celery, chopped
Small pasta or orzo
Olive oil or butter
Salt
Black pepper
Dried thyme
Fresh parsley

Instructions
In a large pot, heat olive oil or butter over medium heat. Add carrots and celery and cook for a few minutes until slightly softened. Pour in the chicken broth and bring to a gentle boil. Add the mixed vegetables and pasta, then cook until the pasta is tender. Stir in the shredded chicken, season with salt, pepper, and thyme, and simmer a few more minutes. Finish with fresh parsley and serve hot.
