This is cold-weather comfort food at its absolute best. Rich, savory meat and tender vegetables are simmered in a flavorful gravy, then topped with creamy, cheesy mashed potatoes and baked until golden and bubbling. Cozy, hearty, and deeply satisfying, this is the kind of meal that warms you from the inside out.
Perfect for winter dinners, Sunday suppers, or St. Patrick’s Day celebrations, this classic shepherd’s pie is made with simple pantry ingredients you probably already have. Even better, the flavors deepen overnight, making leftovers just as delicious—if not better—the next day.
Ingredients
Meat Filling
1 lb (450 g) ground lamb or ground beef
1 small onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
1 cup frozen peas
2 tbsp tomato paste
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
Salt and black pepper, to taste
2 tbsp olive oil or butter
Mashed Potato Topping
2 lbs (900 g) potatoes, peeled and chopped
3 tbsp butter
½ cup warm milk or cream
½ cup shredded cheddar cheese (optional but recommended)
Salt, to taste
Instructions
1️⃣ Prepare the Potatoes
Place the potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes. Drain well, then mash with butter, warm milk, salt, and cheese until smooth and creamy. Set aside.
2️⃣ Cook the Filling
Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and cook until soft. Stir in the garlic and cook for 30 seconds. Add the ground meat and cook until browned, breaking it up with a spoon.
3️⃣ Build the Flavor
Stir in carrots, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour in the beef broth and simmer for 10–15 minutes until thickened. Fold in the peas and remove from heat.
4️⃣ Assemble
Preheat the oven to 190°C (375°F). Spread the meat mixture evenly in a baking dish. Spoon the mashed potatoes on top and spread gently with a fork. For extra texture, drag a fork across the surface.
5️⃣ Bake
Bake uncovered for 25–30 minutes, or until the top is lightly golden and the filling is bubbling around the edges. Let rest for 5–10 minutes before serving.
Serving Tip
Serve with a simple green salad or steamed vegetables for a complete, comforting meal.
