Healthy Blueberry Apple Oatmeal Cake


This Healthy Blueberry Apple Oatmeal Cake is a naturally sweet, wholesome treat made with oats, fresh apples, and juicy blueberries. Ingredients
2 cups rolled oats
1 cup milk (dairy or plant-based)
2 apples, peeled and grated
1 cup fresh or frozen blueberries
2 eggs
3 tbsp honey or maple syrup
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
2 tbsp coconut oil or olive oil

Instructions
Preheat the oven to 180°C (350°F) and lightly grease a baking dish.

In a bowl, mix the oats and milk. Let soak for 10 minutes until softened.

Add eggs, honey (or maple syrup), oil, vanilla, cinnamon, baking powder, and salt. Mix well.

Fold in the grated apples and blueberries gently.

Pour the batter into the prepared baking dish and spread evenly.

Bake for 35–40 minutes, or until golden and a toothpick inserted in the center comes out clean.

Allow to cool slightly before slicing and serving.
