Pistachio Tiramisu


Ingredients

For the Pistachio Cream:

½ cup pistachios, finely ground
⅓ cup sugar
1 cup heavy cream
1 tsp vanilla extract

For the Mascarpone Layer:

8 oz mascarpone cheese
½ cup powdered sugar
1 cup heavy cream
1 tsp vanilla extract

For the Ladyfingers & Espresso Mix:

1 cup brewed espresso (cooled)
2 tbsp coffee liqueur (optional, like Kahlúa or Amaretto)
18-20 ladyfinger biscuits

For Garnish:

Crushed pistachios
White chocolate shavings
Cocoa powder

Instructions

Step 1: Prepare the Pistachio Cream

1️⃣ Blend pistachios and sugar into a fine powder.
2️⃣ In a bowl, whip heavy cream and vanilla until soft peaks form.
3️⃣ Fold in the pistachio-sugar mixture and set aside.

Step 2: Make the Mascarpone Layer

4️⃣ In another bowl, whisk together mascarpone, powdered sugar, and vanilla until smooth.
5️⃣ Gently fold in whipped heavy cream until creamy and fluffy.

Step 3: Assemble the Tiramisu

6️⃣ In a shallow dish, mix espresso and coffee liqueur.
7️⃣ Quickly dip each ladyfinger in the espresso mixture (don’t oversoak!).
8️⃣ Layer half of the soaked ladyfingers in a serving dish.
9️⃣ Spread half of the mascarpone mixture, followed by a layer of pistachio cream.
🔟 Repeat layers with remaining ladyfingers, mascarpone, and pistachio cream.

Step 4: Chill & Serve

1️⃣1️⃣ Cover and refrigerate for at least 4 hours (or overnight) for the best flavor.
1️⃣2️⃣ Before serving, dust with cocoa powder, sprinkle crushed pistachios, and top with white chocolate shavings.
