Ingredients

  • 1 pork loin (about 2–3 lbs / 900 g–1.3 kg)
  • 1 can (12 oz / 330 ml) Coca-Cola (regular, not diet)
  • 1 cup ketchup
  • ¼ cup brown sugar
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • Salt, to taste

Instructions
Preheat the oven to 175°C (350°F). Lightly grease a baking dish or roasting pan.

Season the pork loin generously with salt, black pepper, and garlic powder on all sides. Place it in the prepared baking dish.

Prepare the sauce in a bowl by mixing the Coca-Cola, ketchup, brown sugar, and chopped onion until well combined.

Pour the sauce evenly over the pork loin, making sure it is well coated.

Cover the dish tightly with foil and bake for 1 hour.

Uncover and continue baking for another 30–45 minutes, basting occasionally, until the pork is tender and the sauce thickens into a glossy glaze.

Remove from the oven and let the pork rest for 10 minutes before slicing.

Slice and serve with the rich Coca-Cola sauce spooned over the top.
