Ingredients
For the Burgers
1 lb (450 g) ground beef (80/20 preferred)
Salt and black pepper, to taste
4 burger buns
4 slices cheddar cheese (optional)
Butter, for toasting buns
For the Caramelized Onions
2 large onions, thinly sliced
2 tbsp butter or olive oil
1 tsp sugar (optional, for extra sweetness)

Instructions
- Caramelize the Onions
Heat butter or olive oil in a skillet over medium-low heat.
Add sliced onions and a pinch of salt.
Cook slowly for 20–30 minutes, stirring occasionally, until soft, golden, and deeply caramelized.
Add sugar if desired and stir well. Set aside. - Prepare the Smash Burgers
Divide the ground beef into 4 equal balls (do not overwork the meat).
Heat a cast-iron skillet or heavy pan over high heat until very hot.
Place a beef ball in the pan and immediately smash it flat using a spatula or burger press.
Season generously with salt and pepper.
Cook for 2–3 minutes until a crispy crust forms.
Flip, add cheese if using, and cook another 1–2 minutes until melted. - Toast the Buns
Spread butter on the cut sides of the buns.
Toast in a pan until golden brown. - Assemble
Place the burger patty on the bottom bun.
Top with caramelized onions.
Cover with the top bun and serve immediately.
