A Humble Dish That Taught Me Gratitude


During my childhood, we didn’t have much, but we always had love on the table.
This was one of the meals my mother prepared often — simple, affordable, and incredibly satisfying. It didn’t rely on fancy ingredients, yet it filled our home with warmth and reminded us to be grateful for what we had.
To this day, one bite brings me right back to those moments. Sometimes, the simplest food carries the deepest memories.

Ingredients:
6 large eggs
2 cups cooked spinach (fresh or frozen, well drained)
1 cup shredded cheese (cheddar, mozzarella, or a mix)
½ cup milk
2 tablespoons olive oil or butter
1 small onion, finely chopped (optional)
2 cloves garlic, minced (optional)
Salt and black pepper, to taste
½ teaspoon paprika or nutmeg (optional)
Chopped parsley or herbs for topping
Instructions:

Preheat the oven to 375°F (190°C). Lightly grease a baking dish.

In a pan, heat olive oil or butter and sauté the onion until soft. Add garlic and cook for 30 seconds.

Add the spinach, season with salt and pepper, and cook for 1–2 minutes. Remove from heat.
In a bowl, whisk the eggs with milk, paprika (or nutmeg), salt, and pepper.

Stir the spinach mixture into the eggs, then fold in most of the cheese.

Pour everything into the prepared baking dish.
Sprinkle the remaining cheese on top.
Bake for 30–35 minutes, until set in the center and golden on top.

Garnish with chopped herbs and let rest 5 minutes before serving.

Enjoy it for breakfast, lunch, or a light dinner
