Balsamic Soy Roasted Garlic Mushrooms


These Balsamic Soy Roasted Garlic Mushrooms are rich, savory, and bursting with umami flavor. Roasted until perfectly tender with caramelized edges, they make an irresistible side dish, a topping for steaks or rice bowls, or a delicious plant-based main. Ingredients:
1 lb whole mushrooms (white or cremini), cleaned and patted dry
3 tbsp soy sauce
2 tbsp balsamic vinegar
2 tbsp olive oil
3–4 cloves garlic, minced
½ tsp black pepper
½ tsp dried thyme or Italian seasoning (optional)
Fresh parsley for garnish (optional)

Instructions:
Preheat oven to 400°F (200°C). Lightly grease or line a baking sheet with parchment paper.
Prepare the marinade: In a large bowl, whisk together soy sauce, balsamic vinegar, olive oil, minced garlic, black pepper, and herbs if using.
Coat the mushrooms: Add the mushrooms to the bowl and toss well until evenly coated.
Arrange for roasting: Spread mushrooms in a single layer on the prepared baking sheet.
