Mexican Pizza with a Twist

Ingredients:

  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Monterrey jack)
  • 1 1/2 cups cooked ground turkey or shredded chicken
  • 1 small onion, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 ready-made pizza crust (store-bought or homemade)
  • 1 medium bell pepper, diced
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 cup salsa
  • Fresh cilantro for garnish (optional)
  • Sliced jalapeños for extra heat (optional)

Instructions:

  1. Preheat your oven according to the instructions for your pizza crust, usually around 400°F (200°C).
  2. In a skillet over medium heat, sauté the diced onion for about 3-4 minutes until it starts to soften. Add the cooked ground turkey or shredded chicken, stirring until heated through.
  3. Sprinkle in the ground cumin and chili powder, mixing well to coat the meat with spices. Pour in the can of diced tomatoes with green chilies and corn. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together. Remove from heat.
  4. Spread the salsa evenly over the pizza crust, creating a flavorful base.
  5. Next, evenly distribute the meat mixture over the salsa layer, spreading it out to the edges.
  6. Top the pizza with the diced bell pepper and black beans, ensuring even coverage. Lastly, sprinkle the shredded cheese generously over the top.
  7. Bake the pizza in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and golden brown.
