Ingredients
For the Cookies:
1 ½ cups all-purpose flour
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
¼ teaspoon salt
For the Filling & Topping:
½ cup lemon curd (store-bought or homemade)
¼ cup granulated sugar (for brûlée topping)
Method of Preparation
Prepare the Dough
In a bowl, cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well until fully combined.
Add Dry Ingredients
Gradually mix in the flour and salt until a soft dough forms. Cover and refrigerate the dough for 30 minutes to make it easier to handle.
Shape the Cookies
Preheat the oven to 175°C (350°F). Line a baking sheet with parchment paper. Roll the dough into small balls and place them on the baking sheet, leaving space between each cookie. Gently press your thumb into the center of each cookie to form an indentation.
Bake
Bake for 10–12 minutes, or until the edges are lightly golden. Remove from the oven and allow the cookies to cool slightly.
Fill with Lemon Curd
Spoon a small amount of lemon curd into the center of each cookie. Let the cookies cool completely.
Create the Crème Brûlée Topping
Sprinkle a thin, even layer of granulated sugar over the lemon curd on each cookie. Using a kitchen torch, carefully caramelize the sugar until golden and crisp. (Alternatively, place under a broiler for a few seconds, watching closely.)

Allow the sugar topping to harden, then serve and enjoy the perfect balance of crunchy, creamy, and citrusy goodness.
