Merry Berry Cheese & Onion Pie

Ingredients:

Shortcrust pastry

2 large onions, finely sliced

Butter

200g mature cheddar, grated

2 tbsp plain flour

250ml milk

Salt & black pepper

Method:

  1. Gently fry onions in butter until soft and sweet.
  2. Stir in flour, then slowly add milk to make a thick, creamy sauce.
  3. Mix in grated cheese, season well, and let cool slightly.
  4. Line a pie dish with pastry, fill with the cheese and onion mixture, and top with pastry lid.
  5. Seal edges, make a small steam hole, and bake at 180°C (350°F) for 35–40 minutes until golden and crisp.

Serve hot with mash or veg for the ultimate comfort meal
