Ingredients
1 ½ cups all-purpose flour
½ cup cocoa powder (unsweetened)
1 cup fresh cherries, pitted and halved
1 cup granulated sugar
½ cup vegetable oil or melted butter
2 large eggs
1 cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
(Optional: chocolate chips or chopped dark chocolate for extra richness)

Instructions (Method of Preparation)

Preheat the oven to 180°C (350°F). Grease and lightly flour a round or square cake pan.

In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In another bowl, whisk the eggs and sugar until light and slightly creamy.

Add the oil (or melted butter), milk, and vanilla extract. Mix well until smooth.

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.

Lightly coat the cherry halves with a little flour (this helps prevent them from sinking), then fold them gently into the batter.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving Suggestion
Dust with powdered sugar, drizzle with chocolate ganache, or serve with whipped cream or vanilla ice cream for an extra indulgent touch.
