
I made this tonight and WOW — so incredibly yummy! Cheesy, saucy, and pure comfort food without the carbs. This one is definitely going into regular dinner rotation.
Ingredients
Meatballs:
1 lb ground beef (I used 85/15)
1 lb spicy pork sausage
1 cup shredded mozzarella cheese
⅓ cup grated or shredded Parmesan cheese
½ cup crushed pork rinds (bread crumb substitute)
2 eggs
2 tsp onion powder
2 tsp fresh minced garlic
½ tsp Italian seasoning
Casserole Toppings:
Low-carb marinara or spaghetti sauce (Rao’s works great)
2 cups shredded cheese (mozzarella or Italian blend)
Fresh basil, for garnish
Instructions
Preheat oven to 400°F (205°C). Spray a casserole dish with cooking spray.
Crush pork rinds in a food processor until fine.
In a large bowl, combine all meatball ingredients. Mix well (hands work best).
Using a small cookie scoop, form evenly sized meatballs.
Place meatballs in the casserole dish and bake for 15–20 minutes, until fully cooked.
Remove from oven and carefully drain excess grease.
Spoon marinara sauce evenly over the meatballs and sprinkle with shredded cheese.
Return to oven and bake an additional 15 minutes, until cheese is melted and bubbly.
Garnish with fresh basil before serving.
